CHORIZZO

1 ½ lb. ground beef or ground pork
2 t. salt
½ t. pepper
1 c. chili powder (more or less to taste)
10 cloves crushed garlic (more or less to taste)
1/3 c. vinegar (any variety) red wine vinegar is good 
1 t. dried coriander (cilantro) optional
few dashes cumin optional

Mix together all ingredients. Store in refrigerator. Chorizzo needs about 8 hours for the flavors to blend, but can be stored up to 3 days before cooking.  Beef chorizzo is good on tostadas or homemade pizza or in chili beans.   Pork chorizzo is good for breakfast mixed with eggs or potatoes. Uncooked Chorizzo can be frozen.
