ENCHILADA CASSEROLE

For enchilada casserole you will need 3 basic ingredients. Any kind of grated cheese, Red and/or Green Chile Sauce, and corn tortillas (although flour tortillas can be used, flour tortillas are good made into rolled enchiladas.) Corn tortillas can be dipped in oil to soften, or wrap 5-6 in a wet paper towel and microwave until soft, about 2 minutes. If you don’t want to soften the tortillas first, just add more liquid to your sauce, and cook the casserole a little longer. Cooked chicken, hamburger, onions, garlic, tomatoes or whole beans can be added to the chili sauce. Alternatively layer tortillas, chili sauce and cheese, then bake. An enchilada casserole can be frozen or refrigerated until you are ready to cook it. I usually cook a thawed casserole for 20-30 minutes on 350° A frozen casserole will take 1-1 ½ hours.
