FRIED CATFISH

1 lb. catfish nuggets
about 2 cups flour
salt and pepper to taste
lard for deep frying
Coat catfish nuggets in flour. Sprinkle with salt and pepper. Fry in deep fryer. Oil or shortening can be used, but the catfish quickly becomes soggy and will not taste as good as when cooked in lard.
