QUICK AND DELICIOUS BEEF DINNER

2 tablespoons oil
1 pound beef, cut in strips as for stir fry
1 small onion, thinly sliced
2-3 cloves garlic, slivered   
1 small can crushed tomatoes (about 1 ½ cups)
1 cup grated cheddar

Cook beef, onion, and garlic in oil until beef is done. Add tomatoes. Heat through. Sprinkle cheese on top. Good with warm flour tortillas, rice and your favorite salsa.
