GREEN CHILI ENCHELADA SAUCE

3 Tbsp. Oil
2 Tbsp. flour
2 tsp. green chili powder* optional Add additional flour if not used.
2 cups chicken broth
salt to taste
1½ cups chopped green chili
onion powder to taste optional
garlic powder to taste optional
Sauté flour and green chili powder in oil over medium heat until just browned. Add broth while stirring rapidly with a wire whisk. Cook until thickened. Season as desired. This sauce is good for chicken, beef or cheese enchiladas. Smother your eggs with it, smother just about anything with it.
