TOMATO / AVOCADO ENSALADA DE CHILE

4 or 5 tomatoes
3 avocados
1/2 onion
1 tsp. olive oil
1/2 tsp. salt and pepper (if desired)
juice from 2 limones (small limes)

Dice tomatoes and avocados. Finely chop onion and rinse under water. Blend olive oil, salt, pepper, and juice of limones. Gently toss all together. Great for picnics. In Chile, it is served at room temperature using the freshest vegetables.
