ONION RINGS

1 large onion
1 extra large egg, lightly beaten
2/3 cup water
1 T oil
1 t lemon juice
1 cup flour
1 ½ t baking powder
1 t salt
¼ t cayenne pepper
Cooking oil for deep-fat frying

Cut onion into ¼ inch slices, separate into rings. Place in a bowl, cover with ice water and soak for 30 minutes. Meanwhile, combine wet ingredients, mix well.  Mix together dry ingredients, then stir into wet ingredients until smooth. Drain onions and pat dry, dip into batter. Add tiny amounts of water or flour if necessary so onions coat easily with batter. Deep fry until browned.
