OVEN BAKED VEGETABLES

Preheat oven to 400º

Cover 18 by 11inch sheet cake pan with the following vegetables:

Brown potatoes
Sweet potatoes
Crushed garlic
Onions
Red bell peppers

Drizzle olive oil over top (about ¼ cup) of vegetables.
Sprinkle on salt, pepper, dried basil, dried oregano, dried thyme, and dried parsley to taste.
Cook for about an hour (until veggies are tender) Stir once or twice while cooking.
